I have many friends who like to cook, some of them are quite passionate about it. What always kills me is the lack of quality utensils in the their respective kitchens. I am a firm believer that if you don't have a good set of kitchen gear you're more likely to eat out.
Here is a breakdown of what you need in order to cook like a chef.
First and foremost make sure you have a good set of knives. Despite popular belief this doesn't have to be a huge set in fact you really need only 4 knives in your set and can get away with 3. First off and most important is a good chef's knife and you don't need some insanely expensive German knife, I believe really expensive knives are like Italian cars - nice to look at but really tough to maintain. You can find JA Henckel knife between $50-$100 dollars and trust me it's worth every penny. Most chefs use a knife called Global, they are Japanese run for about $100 and are easy to maintain.
Next knife in your repertoire needs to be a good bread knife for well obviously bread and more. Bread knives are the best thing to cut ripe tomatoes with or any other soft veggie or fruit. Third on the list is a good boning knife, if you have a good fish monger you won't need this but it is always fun to impress your friends with your filleting abilities. Last on the list and this is purely optional is a paring knife. If you are interested in making some cool designs out of fruit or any cutting that will require that you get into a tough place this knife is indispensable!
That's it 3 maybe 4 knives, the chef's knife will really do just about everything you need as long as you maintain it!
Next up is your pots and pans, unlike a women's purse expensive brand name pots and pans are usually the best. If you have the money the All-Clad copper core set is hands down the best but will cost you about 2K. If you want to be in the All-Clad world their stainless steel line is very good and for a decent set your looking about $500-$800, while this is a decent amount of money this is 10 or less restaurant nights with your family. Trust me the food will taste better and you'll be more interested in cooking when you have great pots and pans.
There are other brand names like Calphalon, Lagostina and T-Fal. You need to keep in mind this is the metal that your food sits on that your family is ingesting into their bodies, spending more here is a good thing!
There are many other kitchen Utensils that I could talk about, fancy food processors, cutting machines, panni grills and the list goes on. Bottom line is if you have a good set of knives and a good quality set of pots and pans you have 90 plus % of what you need.
